Ingredients:
- 1 pound chicken breasts, skinned and boned
- ¼ cup Olive Oil
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- 1 medium tomato, chopped
- 6 pitted black olives, rinsed
- 1 clove garlic (or 2 scallions), minced
- ½ cup dry sherry or dry white wine
- ¼ cup low-salt chicken broth
- 2 tbsp Mazzone Extra Virgin Olive Oil (Original OR and of the flavor infused oils)
