Chicken Tomato

Ingredients:
  • 1 pound chicken breasts, skinned and boned
  • ¼ cup  Olive Oil
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 medium tomato, chopped
  • 6 pitted black olives, rinsed
  • 1 clove garlic (or 2 scallions), minced
  • ½ cup dry sherry or dry white wine
  • ¼ cup low-salt chicken broth
  • 2 tbsp Mazzone Extra Virgin Olive Oil (Original OR and of the flavor infused oils)
 


Directions:

  1. Brown chicken breasts in olive oil in a large skillet for about 15 minutes or until lightly browned.
  2. Sprinkle with pepper and salt and transfer to covered serving dish. Keep warm.
  3. Add tomato, olives, garlic, sherry, and chicken broth to skillet.
  4. Bring sauce to a boil and reduce heat.
  5. Simmer for 7 minutes.
  6. Add olive oil gradually while stirring.
  7. Continue heating until sauce is warmed through.
  8. Do not allow to boil.
  9. Pour sauce over chicken and serve.
